I see it's up to the Chinese guy in the forum to explain this, then.
The Chinese Zodiac has twelve animals. In no particular order:
Dragon, Horse, Mouse/Rat, Rabbit (me! Whoo hoo!) Ox/bull, Snake, Boar/hog/pig, Goat/Sheep, Dog, Monkey, Rooster, Tiger.
There is a specific order they go in, but I'm too lazy to look it up.
Anyway, they work in a twelve year cycle. The animals are each matched up to a particular element or material. The traditional elements are of course, Earth, Air, Fire, and Water. The other materials are wood and metal.
All these things change every twelve years. Much like in Western Zodiac, each animal (like Leo or Capricorn etc) is meant to have certain personality traits. For example, Rabbits are meant to be creative, among other things.
The year you're born in determines the animal sign you have, and the traits that you're supposed to grow up with.
Some people take this extremely seriously, as with Western astrology, others just have fun with it. I subscribe to the latter camp.
There is an origin story about the Twelve Animals. It's sorta fun to read.

Michelle posted it on twitter. If this season has taught me anything, it's that there are a lot of cut scenes. I don't suppose they put them in the DVD extras, do they? Well, I suppose that depends on if these 'deleted' parts are actually filmed or not... This is the sort of thing they should be including as extras on DVDs. I purchase access digitally to seasons as they become available, and not only would physical media just be another thing to keep track of, it doesn't really offer an incentive for it over digital media. I understand things having to hit the floor for time reasons, it's just the reality of things, but I wish they would make these scenes available as extras. These things should be included on dvd's. I'm glad that scene wasn't used because it goes against canon. George does know his birthdate because he's met his mother and probably still has some contact with her, so she'd tell him when he was born. I have all the MM dvd's and I've always been sad that they don't include deleted scenes or the web series. That is something missing from them.

OMG. Just saw this episode. I cannot tell you how much I loved it. Also I gotta go find out my Chinese sign.... *googles* edit: I am a Horse! I will accept such. But what kind of horse? The first website failed to tell me, but apparently a Metal Horse! I like it.

Hey yo guys Sorry I'm really late to the party here. But I bought cookies!
Overall I thought this episode was a nice way to cap off the usual episodes for the year, nothing to serious and heavy. I knew what was going to happen once Julia suggested "for science". It was great seeing more of Rebecca; just so we can get a better feel for her character at this point.
George was on top form this episode, with his tangents into the Chinese Zodiac. Though I do wish Julia had given her birth year for timeline purposes.
On my timeline I declared Murdoch's birthday to be the date on Maureen Jennings's website (1863) and George was left on the doorstep of a church on March 14 1867. I'm a wood pig btdubs
Eh. Not much more to say really.
Looking forward to the christmas episode obviously on the 21st, and at least this year guys we only gotta wait until Jan. 11th (wasn't it March something last year??)

I'm a Fire Pig. Apparently I'm not too bright, like to sleep and eat, I'm lazy and clumsy BUT...... I don't make plans to hurt anyone (I guess that just happens because of the aformentioned clumsiness). Soooooo, really glad I read that today. Going to have lunch and go back to bed. depressed.

For what it is worth, pigs are supposed to be quite bright creatures, as opposed to old goats........
